I came up with this recipe after a little trial and error and I have to say it is the closet I have gotten to the original alfredo sauce. I love to cook up some onions, mushroom, and spinach to go with it and boy it is delicious! It is thick and garlicky and I could probably eat it everyday. I have to admit, I am damn proud of this recipe. Fettuccine Alfredo used to be my favorite meal before I went vegan and it has been tricky coming up with a recipe that is just as good as the original that is also low fat. I hope you enjoy it as much as I do!
1 package of silken tofu
1/4 cup of yellow miso paste
2-3 cloves of garlic (start with two and then add more if you like it really garlicky)
3/4 cup of vegetable broth
black pepper to taste
dried basil and parsley to taste (optional)
Put everything in the blender and blend until smooth. Heat on the stove before pouring it over your pasta of choice.
